Pickled chillies is a delicious and easy way to preserve spicy chillies. Prepare in advance and keep a jar in the fridge and serve with sandwiches, salads, noodles or fried rice. It can also be added to pizza or sandwiches or nachos. These chillies are sourish with a slight tinge of spiciness. Ingredients: 300g Chilli (Red/Green) 3 garlic cloves 1 tablespoon salt 1 teaspoon sugar 3/4 cup white vinegar 1 cup water How to make Picked Chilli? Prepare a sterilised clean dry jar to store pickle. Rinse the chillies, trim off the stalks then slice crosswise rings. Transfer the chillies to the jar. Bring vinegar, sugar, water, salt and garlic to a boil in a saucepan. Pour hot pickling liquid over chillies. Allow to cool to room temperature and tighten the lid. Store in a cool, dark, dry place for up to 2 weeks. Keep in the fridge for up to 2 months once opened. *What type of chillies to use? For this recipe, I used green Red chillies which are spicy compared to the green ones. However, you can use red or green chillies to pickle according to preference. *How to use pickled chillies? Pickled chillies are either served plain or with soy sauce. This would be a best along with noodles and rice. Also, mix this pickle with sour cream or soft cream cheese then pile into corn tortillas or with slices of avocado, chicken or strips of pan-fried or grilled steak. The pickling liquid is delicious in dressings and marinades. *How to store pickled chillies? Store in a cool, dark, dry place for up to 2 weeks. Keep in the fridge for up to 2 months once opened. Use a sterilised jar for chillies and always use clean and dry utensils to take the chillies slices from the bottle. This will help in extending the shelf life of the pickled chillies. Wash the Green Chilli Peppers and remove the top and bottom part then cut them into 1cm size. 2. Remove the bottom and the skin of the garlic. 3. It is simple and very easy to prepare. Ingredients: • 4 tbsp or 1/2 cup Mustard oil • 200 gms Green chillies • 1 tsp Coriander seeds • 1 tsp Mustard seeds • 1/2 tsp Cumin seeds • 1/2 tsp Fenugreek seeds • 1/4 tsp Turmeric powder • Salt to taste • 1/2 tsp Badishep / Fennel seeds • 1 tsp Vinegar Method: • Heat the mustard oil and keep it aside. Let it cool down. • Take green chillies, remove its stalk and cut them in 1/4” size. • Heat up a pan on medium heat. Add coriander seeds, mustard seeds, cumin seeds and fenugreek seeds. • Roast on medium heat for about 2-3 minutes. Don’t over roast these. Turn off the gas. • Blend everything course in blender. Don’t make fine powder. Lonche masala is ready. • Add this masala into green chillies. Add turmeric powder, salt to taste, fennel seeds or badishep and vinegar. Mix everything well together. • Add the mustard oil. You can use peanut oil or vegetable oil instead of mustard oil. Mix well. • Green chilli pickle is already. You cannot have it immediately. • Take a clean and dry glass bottle. Transfer the pickle into glass bottle. • Cover the bottle with clean cloth. Seal the cloth with a rubber or thread. • Put the bottle under the sun for 2-3 days. Shake the bottle in between. Red Chilli Pickle, Banarasi lal mirch ka achaar, bharwa lal mirch ka achar, Stuffed Red Chilli Pickle #LalMirchAchar #RedChilliPickle #MirchAchar Ingredients for Red chili Lemon pickle Red chilies (लाल मिर्च ) - 250 gms Mustard oil (सरसों तेल ) - 1 cup Lemon (नींबू) - 2 Salt (नमक ) - 3 tbsp or to taste Black mustard seeds (काले सरसों के दाने ) - 4 tbsp (40 gms) Fennel seeds (सौंफ ) - 2 tbsp ( 20 gms ) Fenugreek seeds (मेथी ) - 2 tbsp ( 20 gms ) Cumin seeds (जीरा ) - 2 tbsp ( 15 gms ) Black pepper (काली मिर्च ) - 1 tbsp ( 8 gms) Carom seeds (अजवायन ) - 1 tbsp ( 5 gms ) Black salt (काला नमक ) - 1 tbsp ( 10 gms ) Turmeric powder (हल्दी पाउडर ) - 1 tbsp ( 7 gms) Asafoetida (हिंग ) - 2 pinch How to make Red chili Lemon Pickle 1. Take Red chili, Wash it and dry in sun for 2 to 3 hours. 2. Heat a pan and roast whole spices such fennel seeds, fenugreek seeds, cumin seeds, carom seeds, black pepper. Stir and slightly roast the spices for upto 2 minutes. Turn off flame, keep to cool. 3. Take oil to be added to pickle heat it up well. 4. As the whole spices cool down,add plain salt too,then coarsely grind in mixer jar. Keepp grinded spices in plate. 5. Coarsely grind black mustard seeds separately, put over the grinded spices. 6. Oil has smoked up rightly, turn off flame. Let oil cool. 7. Add the rest of the spices such as black salt, turmeric powder, asafoetida, lemon juice in the grinded spices. Add 2 tbsp oil from pan to the pickle and mix it. 8. Remove stalk from chili. Slit the chilies from the centre vertically, take out seeds and pulp from it. Prepare all chilies likewise.Put the seeds from the chili in the spices mix. Fill the chili with spice mix. Keep the stuffed chili in plate. 9. Take out the oil in a bowl. Dip each stuffed chili in oil and take out, keep it in a separate bowl. 10. Fill up the sterilized container with the stuffed chili pickle.Put the leftover spice over the chilies, pour oil over them, then close lid of container and keep it in sunlight, cupboard or shelve to turn soft for 3 or more days. Serving : 11. Relish mouth drooling and Spicy Red chili lemon pickle with all your meals. Green chili and garlic pickle Recipe in English: Ingredients: -Green chilies 250 gms -Garlic cloves (Desi) 125 gms -Salt 1 tbs -Cumin seeds 2 tbs -Nigella seeds 1 tbs -Fenugreek seeds 1 tbs -Mustard seeds 1 & ½ tbs -Fennel seeds 1 tbs -Sugar 2-3 tbs -Vinegar 2 cups -Turmeric 1 tsp -Ginger garlic paste 1 tbs -Oil ½ cup Directions: -Wash green chilies and garlic cloves, dry them properly. -Cut green chilies from center with the help of kitchen scissor. -Add garlic and salt in green chilies and give it a good mix and leave for half an hour. -In grinder add cumin seeds, nigella seeds, fenugreek seeds, mustard seeds, fennel seeds and sugar and grind it until all ingredients are crushed. Achar masala is ready. (Don’t make a fine powder) -In vinegar, add turmeric, ginger garlic paste and achar masala and mix well. -Heat oil in wok, add green chilies and garlic cloves (coated with salt), saute on high flame for 5 minutes. -Now add vinegar mixture and cook for 5-7 minutes until oil comes on surface. -Serve and enjoy. Tips: -Instant pickle should be made in small batches. 1/2 kg or 1 kg maximum. -Pickle spice mix can be made in large quantity and saved for used whenever required. -You can store at room temperature or refrigerate. -Always use clean and dry jars. -Don’t use wet or used spoon. -Don't eat directly from the jar using hand as hand. Recipe in Urdu: Ajza: -Hari mirch 250 gms -Lehsan (desi) 125 gms -Namak 1 tbs -Zeera 2 tbs -Kolonji 1 tbs -Methi dana 1 tbs -Rai 1 & ½ tbs -Cheeni 2-3 tbs -Sirka 2c ups -Haldee 1 tsp -Adrak lehsan paste 1 tbs -Oil ½ cup Directions: -Hari mirch aur lehsan ko dho ker ache tarhan sukha lein. -Hari mirch ko kitchen scissor ki madad sa bech mein sa cut ker lein. -Ab hari mirch mein lehsan aur namak dal ker ache tarhan mix ker lein aur adha ghantay kliya chor dein. -Grinder mein zeera,kolonji,methi dana,rai,sauf aur cheeni shamil ker k itna grind karein k tamam masala crush ho jaye.Achar masala tayyar hai.(powder nahi bananana hai) -Sirka mein haldee,adrak lehsan paste aur achar masala dal ker ache tarhan mix ker lein. -Karhai mein oil garam karein,ab is mein hari mirchein aur lehsan (coated with salt) shamil ker k tez ancch per 5 minute kliya saute karein. -Ab is mein sirka mixture dal ker 5-7 minutes kliya paka lein yahan tak oil upper ajaye. Tips: -Instant pickle hamesha kam quantity main banana ziada behtar rehta hai. 1/2 kg se 1 kg jo jald hi istemal hojaye. - Achar ka masala mixture banakar rakh len aur jab achar banana ho tu istemal karlen. -App is achar ko room temperature mein store ker sakte han ya phir refrigerate ker lein. -Hamasha saaf aur sukha jar istamal karein. -Geela or jhoota chamcha istamal na karein. - Achar hath se jar main se na nikalen, spoobn ka istemal karen.

Take some coarsely ground Yellow Mustard Seeds and Nigella Seeds and roast them for a min. In the same pan, roast the Coriander Seeds, Fenugreek Seeds, Cumin Seeds and Fennel Seeds and then grind them coarsely. Don’t grind the Yellow Mustard Seeds and Nigella Seeds with the other spices. Then mix the Yellow Mustard and Nigella Seeds with the ground spices and put Turmeric Powder, Salt, Black Salt and Kashmiri Red Chili Powder and mix them well. Heat some Mustard Oil and then let it to be cool down. When it gets Lukewarm then put some Asafoetida in it. Then put the ready masala in the chopped Chilies and the Mustard Oil in it and mix it properly. Put some White Vinegar in the pickle and the Green Chili Pickle will get ready.
